Description: On our farm, we discovered a small patch of chalky, white soil that reminded us of Champagne. We only have enough for 3 small batches, which we plan to release over the next 3 years. Our first batch, made from this special soil, has a strong mineral presence while still maintaining the characteristic flavors of Matatlán.
